Dijon-style mustard
dried tarragon
olive oil
ice cold water
fresh California Bartlett pears
lemon juice
Bibb lettuce OR
torn mixed salad greens
thinly sliced prosciutto OR
thinly sliced deli-style smoked ham
crumbled Gorgonzola cheese OR
other blue cheese

To prepare dressing: Combine mustard and tarragon in a bowl. Slowly pour in oil. Whisk ice water in briskly. Chill dressing.

To prepare salad: Halve and core pears; slice each pear half into thirds, lengthwise. Place pears in a large bowl of cold water with lemon juice. Line 4 salad plates with lettuce. Arrange prosciutto over lettuce. Fan pear slices over salad. Sprinkle with cheese. Drizzle with dressing. (Makes 4 servings)
