PEAR KALE AVOCADO GRAIN BOWL WITH BACON
Prep time: 10-15 minutes
2 cups kale
2 cups cooked farro
2 Bartlett pears, cubed
1 avocado, sliced
4 strips bacon, cooked
1/4 cup toasted sesame oil
juice of one lemon
salt and pepper to taste
- Toss kale with 2 Tablespoons sesame oil and a dash of salt in a large bowl. Push to one side of the bowl.
- Place farro to the other side of the bowl.
- Arrange cubed pears, sliced avocado, and bacon as desired.
- Drizzle with sesame oil and lemon juice, sprinkle with salt and pepper.
If using uncooked farro, soaking overnight drastically reduces cooking time, cook according to package instructions. Optional: sprinkle with crushed red pepper to add a kick of spice.
