CALIFORNIA PEAR SALAD
2 Tablespoons balsamic vinegar
2 Tablespoons extra virgin olive oil
1 Tablespoon honey
1/2 teaspoon Dijon mustard
1 pinch of salt and pepper to taste
5 ounces mixed baby greens
1 California pear, cored and thinly sliced
1 small shallot, thinly sliced
1 cup toasted walnuts
3-4 ounces crumbled goat cheese
Prepare salad dressing by whisking together all ingredients in a small bowl, adding the olive oil last in a slow stream.
Dress the salad greens with half of the dressing and toss to coat in a salad bowl.
Sprinkle on the remaining ingredients and serve with remaining dressing on the side.
